Did you know that unused egg yolks can be frozen? To prevent coagulation, stir ½ teaspoon of salt or 2 teaspoons sugar into each ½ cup yolks. Depending on your menu for the next days, you can use the sugar mixture for dessert or the salt mixture for un-sweet food items requiring egg yolks. Place yolks in GladWare Food Protection Container or Glad Freezer Zipper Bags, make sure to use the “Write-on strips” to label contents accordingly.
